Soaking them in cold water for 2 hours , changing water after an hour, gets rid of most of of starch so your finished product is not so cloudy.. It is great for canning french fries for baking or frying later. Also if you do smaller chunks in some it is more like home fries or chunky hash browns. Good video.

Canned goods can last a lot longer than 2 years. We eat from ours for many years.

My family eats 20 pounds of potatoes or more per month. When I could, I would buy 100 pounds at a time. Now I live in a state where you can't even get 20 pound bags. That's a lot of canning.

Just curious as to why you par-boiled the potatoes for 2 minutes. I raw packed mine and they shrunk up quite a bit.
