"Mina" or water mine, it is very common in north part of portugal, to take advantage of the uneven terrain, straight mines where built until you reached good water flow (my grandparents land had one and you can see them close to roads constantly flowing). Many of mines are unstable or cavedin, but water always finds a away, from the size of your reservoir I would say something happened there or you have alot seepage since the water should be able to fill the full reservoir even during summer. Normally you would have a smaller reservoir inside the mine so the silt or debris in the water would accomodate and then it would go to the main reservoir in a pipe or cemented channel. Have great memories swimming in that "tanque" (name given to the outside reservoir) with my cousins. I am sure your neighboors know it exists as in drought times people would share these

That stone cave is a Caleiro, a traditional Portuguese underground aqueduct for directing gravity-fed spring water. They are quite common in the northern and central regions of the country. They are typically small and flat-topped, just like the one you revealed. There are a number of them in the Serra do Caramulo area where you are. Typically, in your area, they are constructed from the local Tondela Granite.

literally any project with water features are the BEST. Clearing the swimming lagoon, grading the pond by basekamp, the pipe of mystery, etc. Love em.

The water tunnel was originally a ditch. Then the farm cut it deeper, lined it with stones and covered it up. During the next heavy rain watch the exit. The water will clean it out where you can't reach, so you may need to clean out the tank, again. Good stone work.

That is an old stone box culvert. These were built before there were pipes. Once you found a natural spring, you would never be able to stop it but you can divert it to go where you want it to go.
