I’ve had amazing results following your sourdough videos from starter to the bread loaves. I now double the recipe and bake 2 loaves at once - one to share. I’ve never had a loaf fail and it’s so much fun sharing the bread and directing everyone to your channel. By the way, I’m 84 years old and love learning new things. I hope you know how much you are appreciated.

113g starter, 340g water, 567g flour (unbleached ap), 20g salt.... just to help with remembering the measurements! People, I just want to say this recipe is one of the best breads I've made.... I love it!

From the written recipe: “Rise at room temperature until at least doubled in bulk. For most people, this will take at least 12 hours, though robust starters or warm fermentation temperatures may decrease this time, and starving starters or cold temperatures may extend it upwards of 30 hours or longer.”<br><br>THANK YOU! I’ve always had bulk fermentation 16+ hours and the whole sourdough community has me feeling like a leper because of it. But… the bread is damn good! You are the FIRST sourdough teacher that has acknowledged that fermentation can last 24+ hours. What can I say?? I keep my starter in the fridge, flour in the freezer and I love the taste of salt!!! It’s so validating.

I found Ben Starr on YouTube about 2.5 months ago. My mom said there was this man with a beanie and glasses giving information about sourdough and how you DON'T have to feed it everyday and how you only have to feed it, until you need more (I probably had 8 oz. Of starter and turned it into a large starter by adding a pound of flour and 16 oz. of water). MIND BLOWN! Now I watch video after video about crumbs and holes when all i want is a good bread. Not throwing shade on anyone's technique by any means, and I love that everyone has taken time in there life to make a food that is easy in the gut. I just know now that I don't have to do everything everyone else is doing, and now that my starter is established, I just use it straight from the fridge. And when I tell you it works....And Mr. Starr, your science behind sourdough and buttermilk information (cinnamonroll video), the best information ever!
