Bita would probably prefer a southern style biscuit. Ours are more soft and fluffy. Not quite as dense.

Yeah, biscuits in the south aren’t normally dense, they’re light and fluffy. Also my Grandmother never used eggs to make her biscuits…

Here in the south, if the biscuits are dense that's a sure sign the cook doesn't know what they're doing. Southern biscuits are a bit crispy on the outside and fluffy on the inside. If you work the dough too much, it will come out dense.

There was a fairly large Dutch presence in the early US, so their word "koekje" got adopted in place of the British "biscuit" to mean the sweet dessert thing. This left the word "biscuit" available to be applied as we do now.
