If you don't want to dilute the pasta water with an ice cube, try instead putting a small metal bowl/cup in the freezer before cooking, and take it out and dump the boiling water into it to help it cool down

Andy, you are so absolutely correct, as a rule I don’t use spaghetti for a bolognese, but rather fettuccine or even better still pappadelle as these pastas work so well with a heavier ragu.

One of my favourite pasta dishes is lasagne, but a quicker similar dish is a pastitsio - same taste profile with something like a ragu and bechamel (and feta) but so much quicker to prep and serve. My husband makes it using spiral pasta rather than tubular, simply because we <b>always</b> have a big container of that in the cupboard.
