Ironically, after several failures in preparing this dish following the videos of Italian chefs, obeying their instructions word for word, it was this silent video that finally helped me to achieve my goal of a creamy and not stringy portion of cacio e pepe !<br>Mille grazie, Signore Prokopyev!

For people wondering, why this dish is hard: It's all about heat control, putting in the right amounts of every ingredient and timing. You preboil the pasta, but have to finish it in the sauce, otherwise the sauce won't be creamy enough. The pasta water needs to have the right amount of starch in it, otherwise it won't emulsify. If you take the pasta out of the water too early, the pasta will be undercooked and the water won't have enough starch. If you take it out too late, the pasta will be overcooked and the sauce also won't be creamy enough.<br>As soon as the pasta is in the sauce: If you use too much heat or cook it for too long, the cheese and the sauce will separate. If you use too little, the sauce won't emulsify and the pasta will be undercooked. <br>If you roast the pepper for too long or with too much heat, it will burn and ruin the dish. If you do it for too little, the dish will be somewhat blend and too sharp at the same time.<br>If you undercook the pepper, it will be too sharp. If you overcook it, the dish will taste like pepper only and you won't taste the cheese, enough.

As home cook, who has an electric stove top and has screwed this up quite a few times, toss your pasta off the burner in the pan and allow most of the steam to release before you add the cheese. You can always apply more heat later if you need it, but if you break the heat threshold to where the cheese starts to break and get stringy there will be no saving the dish.

Ahh.. finally someone using a spatula to get ALL the cheese mixture out of the bowl 😊. I hate it when people only use a spoon or fork and there is something left, It drives me crazy !😧 😅.
