I grew up eating these with onion and chopped celery and after making them in to patties my Mom dipped them in cornmeal. To Die For! At our house we ate them with lemon juice. We still do!! My absolute favorite dish in the whole world. And if you're really broke, you can substitute tuna or mackerel.

I leave in the salmon bones but not the skin. The bones are so soft and very healthy, lots of calcium!!

One of my oldest recipes, written on a 3x5 card when we got married. I’ve made them many times. They’re great with Panko bread crumbs added in. In last ten years we’ve also started eating fresh salmon. That goes into the oven with orange marmalade spread on top. Mom also made a salmon macaroni casserole which I make, too - also written on a 3x5 recipe card!

Thanks for posting this; some of my best childhood memories come from my grandmother’s supper table when she had salmon croquettes and grits with toasted cheese
