We were there right when you were. A few recommendations for next time...
(1) Visit Lycabettus Hill and take the funicular up for epic views of Athens, esp the Acropolis. There's a restaurant on top. Be be sure to get there at least an hour before sunset as the viewing promenade fills up quickly.
(2) The Acropolis Museum is excellent. Very modern and a great souvenir stop.
(3) Monument to the Unknown Soldier - specifically the changing of the guards. For the full parade, go on Sunday at 11am. Best to get there an hour before as crowds start to form.
(4) Meteora... although outside Athens, it's an absolute gem of Greece. Rent a car, leave early and take a drive up to see 6 spectacular monasteries. We rented on a Sunday night so we could drive up early the following morning at 5:45am. Zero traffic, a gorgeous 3.5 hr drive. Some recommend staying overnight and swinging by Delphi on the return trip. Be sure to check monastery hours beforehand if there's one in particular you prefer. We visited the Monastery of the Holy Trinity (of James Bond fame) and Varlaam. If you like working out, you'll enjoy climbing those stairs.

the Hidden dinner spot is Diporto Taverna is a historic Athenian eatery in the Central Market area, operating since 1887 in a no-sign basement that has become a time capsule to early 20th-century Greece. Characterized by its lack of signage and a menu determined by the day's market finds, it serves traditional, home-style Greek dishes like chickpea stew and fried sardines, often accompanied by resinated house wine served from barrels and its sadly expected to close, as confirmed by its owners in March 2024, due to the sale of its building to foreign investors.

    Very nice!!
One tip from a local (yes, me). Cine Paris in Plaka, is an "open" cinema, which means no roof on top, is like a small garden, with chairs and little tables on the side, the movie screen in front of you, and the sky above! Soooo it is open only when it's dark and of course only on summer time (May-September).
The special with cine Paris, is that even if the movie sucks, you can enjoy your beer, and if you look on your right and above, there is an amazing view of Acropolis
