I found that the easiest way to wash the majority of the dirt from my carrots is to spray them with the hose outside. It knocks off the 95% of the soil so it won't go down your drain clogging your pipes or septic. The final 5% is scrubbing them individually in the sink. Still tedious, but much less mess.

If it's 'nose to tail' then the trotters are absolutely useful. They are the biggest gelatin producing part and also add flavour.

Something else that really helps carrots to grow is sand, mix it in to your soil about a ft deep. This will give the carrots deep soil to reach down and grow.<br>In freeze drying carrots, I cook in broth, then drain and put on trays and prefreeze. But of course you may have your way already.

The ziplock moisture control bag are amazing for storing carrots in the fridge. I’ve had mine last for over a year that way. <br>I DO NOT wash them. Simply pick on a dry day and brush off dirt. Then wash just before using. <br><br>I find the best tip for carrots is when they are just baby carrots thin them to about 2 inches apart. You end up with much larger carrots that store so well.

I have a quick fix for washing small carrots - I just use a hose to rinse them off - then put them into pillowcases (small amounts into each one) tie them and put them trough the wash cycle in the washing machine - a real time savor (I put about 5=6 pillowcases in a load)

For Peppers you might be interested in something I do. I use my food processor but you can chop your peppers fine and in a bowl, combine them with lime juice to make a slurry and freeze in cube trays for 3-4 days. Then you can put them into containers in the freezer and you have them to add to your soups, stews etc.
