Here's the complete recipe 👇 Ingredients 📋: · 500 g of nopales (prickly pear cactus pads) 🌵 · 1 cup of raw beans 🫘 · 3 medium potatoes 🥔 · 3 tablespoons of lard or vegetable oil · 3 eggs 🥚 · 3 tablespoons of shrimp powder 🍤 · 4 guajillo chiles 🌶️ · 2 mulato chiles 🌶️ · 2 árbol chiles 🌶️ · 1/2 onion 🧅 · 2 cloves of garlic 🧄 · Salt to taste 🧂 · 1/4 cup of chopped cilantro 🌿 · Lyncott rosemary goat cheese 🧀 Preparation 🥣: 1. Clean the nopales (prickly pear cactus pads) and cut them into small squares. Boil them in water until soft, drain, and set aside. 2. Clean the beans and cook them in water until very soft. Set aside along with their broth. 3. Boil the potatoes in their skins in water until soft. Let them cool, peel them, and cut them into small squares. Set aside. 4. Beat the eggs until fluffy and stir in the shrimp powder. In a saucepan, heat lard or oil and, using a spoon, form small fritters. Fry them until lightly browned on both sides. Remove and set aside. 5. Toast the guajillo, mulato, and árbol chiles along with the onion and garlic. Rehydrate them with hot water if necessary and blend until you have a smooth salsa. 6. In a large saucepan, melt the lard and sauté a few slices of onion. Add the nopales and fry them lightly. Stir in the chili sauce, the cooked beans with a little of their broth, and the potatoes. Season with salt to taste, add the chopped cilantro, and simmer over low heat for about an hour, stirring occasionally. 7. Once the stew is well combined and the flavors have melded, add the shrimp fritters and cook for a few more minutes so they absorb the broth. 8. Add slices of Lyncott rosemary goat cheese.
