Texas is definitely the gold standard in BBQ. I think its becausee its now a huge touriksm industry for them and they also have the texas monthly that they have to be on their game for. If you go to Kansas City, Memphis, Carolinas, etc you're just not going to get as consistent BBQ s Texas. There's legitimately 20 or 30 BBQ spots in Texas that are all elite now.
