I am one of his staff. Learning from him is an amazing experience. As shown here he is so down to earth. So humble. Knowing Saito-san and learning from him is one of the best thing that has happened to me. Thank you Simon and Martina, for allowing others to know chef Saito better. Absolutely love this video.

The thing that I've always respected about Japanese culture is the dedication to quality. They look at their jobs as a craft, a craft to master. And for a customer, it is a very satisfying experience knowing the effort and detail that goes into producing the final product. For me, there is no cultural experience quite like dining out in Tokyo.

Damn, the editing skills of this video are exceptional. And I like how the guy shaved his head, his restaurant is already spotless, but for some reason, seeing his shaved head just makes it feel even cleaner....
