UPDATE: Sushi Sho just got upgraded to 3 Michelin stars! Fully fully deserved and the work they’ve put in to get here shines through — it’s a super special experience ❤

Love that the video is 80% subject matter, and 20% narration. Thank you

That chirasi box is one of the most beautiful things I've ever seen

12:30 The box is smart for economics / cost control, exposing guests to the restaurant's quality without securing reservation, usable trim in many cases. Let's look at the execution of it all and we can see how it works so well for guests and for the restaurant.

I had the privilege of dining here yesterday and without a doubt this is the best omakase experience I’ve ever had, nothing comes close. From the moment you walk in to dessert, you’re left in complete awe at the artistry and effort put into every piece by chef Nakazawa san and his team. I had the shorter omakase ($450) and complemented it with 8 additional Okonomi pieces ($20 to $50 per piece) plus left with a Chirashi takeout box (now $100). Easily the most expensive meal I’ve ever had. Would do it again in a heartbeat. Staff recommended I visit Jo for the best kaiseki cuisine in New York. If you have a chance to visit Sushi Sho do not hesitate! It’s worth every penny.

It was an absolute honor to get the chance to document the work that goes into the Sushi Sho experience - this was one of the most complex videos to film and edit that I've ever done so definitely show some love to the restaurant if you liked the video ❤

I went there and it's the best sushi experience outside of Japan I've ever had. But I'm still conflicted. $450 is A LOT of money for a single meal, and yet at the end of the omakase, we left hungry - I know that the chef expect you to order okonomi, but we weren't prepared to spend $700-800 on a single meal, so ended up ordering only 2-3 okonomi, and still hungry.

No idea how you managed to wrangle access to the restaurant, but so glad you did! This is your best work, imho, in terms of storytelling and editing. Just beautiful from start to finish. Chef Nakazawa has a very interesting perspective on driving things forward. So much focus on tradition, but also using that tradition as a foundation for innovation. Lovely blend of past and future. Thanks for continuing to put out such amazing content! ❤❤❤

An italian lady cooked a plate of all these cookies one year that reminded me of this box. Each one was completely its own shape and its own taste and mouth feel. Like maybe ten things. Garlic cookies even.. Reminds of this box. Best memories from growing up with my italian buddy francesca.
