Here in our community,  we replace the coffee grounds with a 50/50 mix of white and brown sugar. Same process, same everything. What we found out is that it is way more sweeter, no bitternes at all.

It worked... But I guess I kinda enjoy my coffee to be more complex and a bit bitter

This is EXACTLY what you do when making moonshine. You dump the "heads" first part and "tails" last part of the distillation... Interesting how this "crosses over" into brewing coffee.

I used to do this with Aeropress. It naturally drips through on bloom so I'd dump out that part of brew and continue brewing.

This method is frequently used by Moroccans in espresso to avoid bitterness due to the average quality of the crops here.

You have blown my mind! I tried this method today with a delicious local Mexican bean and a delicious Ethiopian this afternoon and am frankly shocked at the difference. I love that you can taste the 10g cast off against the back half. This took my two favorite brews and made something completely different. Mind blown. Thank you so much for sharing!

Makes sense. Still, I need to taste it for myself.

Wow! I love and appreciate the passion and dedication to a perfect cup of coffee. I got the gist of it. I must make this asap and then keep the technique indefinitely. Thank you for sharing

This Works.  I have tried some great recipes but there is always an astringent aftertaste I was never able to get rid of despite changing other variables.  This is the key, toss the ends and keep the middle brew.  I am drinking a delicious cup right now with sweet notes and no after taste :)  Thank you!!!

I do something like this by accident with my drip coffee maker. I wait until the water gets higher up in the filter basket before I put the pot under, releasing the liquid. A fair amount of the grounds get stuck on the sides and don’t get extracted for the rest of the brew cycle. It always comes out better and now there’s at least an explanation for the technique. I think my way is probably easier: start the coffee maker, wait 2 or 3 minutes until the water level gets up there, and then put the carafe in, releasing the liquid.
