  Let me（I live in China）answer the question about the whereabouts of waste oil from hot pot. There is no doubt that China has had large-scale safety issues with edible oil in the past. But you basically don&apos;t need to worry about this issue anymore. As long as the restaurant you go to has a proper business license, they are strictly regulated by food safety departments and undergo regular random sampling inspections. The waste oil from hot pot broth is weighed and recycled by recycling companies (waste oil recycling is now mandatory), and ultimately separated and filtered to produce biodiesel or industrial raw materials (like soap or lubricants).Waste oil recycling is now a large industry in China. It is now a serious illegal act for restaurants to illegally dump or reuse waste oil.😗

  TLDR: Licensed waste management companies.<br><br>Fun fact: 150 tons of used oil in Sichuan alone gets converted into sustainable aviation fuel and other biodiesels.<br><br>Punishment for reusing: 5 years jail + fines. Official term is &quot;saliva oils&quot; to intentionally create a negative connotation to discourage the practice.<br><br>The leftover soup base is cooled and separated. They have licensed waste management companies that cool and separate the high fat solids (base is usually beef tallow) and the liquids. A restaurant that reuses hotpot base would quickly be identified because the flavor alone would give it away before any inspector could even get there. It does exist, but the restaurants typically fail quickly. That&apos;s also why hotpot has a typical order of operations....things that take a long time to cook first (root veg), then flavor modifiers (spam) and meat/veg (cooks quick, adds flavor), then noodles (fully flavored broth). The flavor changes and intensifies each step, which is unfortunate when eating with sichuan locals if you don&apos;t get a split base of spicy/non-spicy.<br><br>Logistics speaking, the hot pot base is cheap because it&apos;s fresh, local and more economical to use fresh. Easier and cheaper to hand it off to the licensed waste management than it is to attempt to reuse, since the addition of fresh chiles would turn it into bitter lava, diluting it down would destroy the flavor, and all processes would quickly destroy the shop&apos;s plumbing. There&apos;s no way to fake it and reuse the base that would be financially beneficial.<br><br>Government prioritizes such services to make it affordable and easy to encourage the enjoyment and preservation of local culture and economy while discouraging illegal dumping down the sewers like how I shockingly witnessed my local &quot;top 5 BBQ restaurant in Texas&quot; pour their old grease down the sewers at night in Houston, TX.
