    Those first few years you spent at home were not a waste at all, that was you grinding out your skills so you could get to where you are now. After 4+ years of really getting into cooking and baking I was working on a pizza last week and the dough ripped, then as I was fixing that the rest of it all stuck together. 4 years ago that would have gone straight in the trash and I would have been upset about it, but because of my experience and now being comfortable I was able to "fix" the issues, keep working and it turned out to be a great pizza that my wife and I enjoyed. Those years of making pizza at home that wasn't the best is how you are amazing better pizza today

    Another great video, Charlie! &nbsp;I agree 100%. &nbsp;I have a digital scale, a Bertello oven, a pizza steel, a Lloyd Detroit style pizza pan, and that&apos;s about it. &nbsp;I always mix by hand, and have learned that time is your best friend. &nbsp;I make pizza every weekend, and if I had to scale that up, I would get a mixer, but I understand the fundamentals of what makes a good/great dough...so that would just make my life a little easier. &nbsp;You don&apos;t need gadgets, but knowledge and experience.👍

    Hey man! This is great advice that I’ve been doing myself without even realizing for years.<br>Would be really interested in seeing some day-to-day running a pizzeria stuff, kinda like you used to do with your pop-ups. Preps and systems and numbers, all that type of stuff.

    Charlie, I&apos;ve been making pizza for apx 4 years started watching you and following many of your moves, if fact I use the same tomatoes that you picked from one of your shoot outs, I now make great pizza and also make great bar style or tavern pizza in Loyd pans... But ty Charlie I learned tons from you
