Dude I say this with all the love in my heart, and I'm always excited to see someone new playing this amazing game, but some of this was a bit painful to watch. You need to take a breath, slow down, and actually read things thoroughly, especially the guides in the handbook. So many of your complaints would have been solved by not rushing through everything and paying attention.

You could have crafted that soil into packed dirt, and then even further converted that into rammed earth (which also has texture variations you can craft it into), both of which look much better than just building with soil (and they won't start growing grass on top of them hehe). You can also build with logs, and even convert those into quarter logs with which you can make a proper log cabin looking build. Now that you have clay you can also run around picking up rocks and craft those into cobble, which also looks nice. There's also wattle and daub, which takes a bit more work to get but you do have access to all the materials for it already (dirt, clay, sand, sticks and dry grass). You can also, if you have the patience, collect a bunch of dry grass, craft it into hay blocks, then use those to make thatch roofing. It is very much possible to make a nice looking base with early game materials, in fact those are some of my favorite materials to build with as they create this very cozy vibe. Though right now securing food is more important, that much is true.

Immediately jumping to farming crops is good but don't expect that to feed you anytime soon. For now you've gotta hunt around for animals, berries and wild crops. Just because animal life is sparse in the area you're in right now, doesn't mean it's sparse everywhere. Collecting all the seeds you can find will be good for you. That includes vegetables, not just grains. You should want those. They last longer than fruit too. There's also edible mushrooms around (and poisonous ones too so pay attention), they're not the most filling but they tend to spawn in big enough clusters to be worth collecting early game. They have saved me many times. If you run around and explore your world you will also come across medium fertility soil (and very rarely small patches of high fertility soil; always grab those if you see them) which I very much recommend over the low fertility. The fertility of the soil dictates the speed at which your crops grow, so your current little patch will take a long time to yield anything.

The game does have a tutorial but you chose to skip over it, then later complained that the game doesn't give you more direction. The tutorial (which you can retroactively still do via the handbook, there's a "tutorials" tab right there) would have told you that when you press "c" your get to see your character info; clothes and armor lots, nutritional info (if you want more max health you gotta eat more different types of food, so zeroing in on grains alone won't serve you in the long run), stats, weather info, time of day, time of the year, how much rainfall the area you're in gets, and more.

Also you can actually pick up all berry bushes by breaking them. You just saw the tool tip for pruning and then just assumed you couldn't break it by hand.

Also if you can remember where you picked up those copper nuggets, I recommend you mark that spot. Copper bits on the surface means there's a deposit of ore directly below it, which you'll later be able to mine with your first pick axe.

This isn't something you could have known, but I just wanna reassure you, there is a way to make torches last forever. If you get lucky you will come across it while exploring ;)

This game, unfortunately for some, requires patience, and for you to read all the guides to understand the mechanics. This is very much a hardcore game. A lot of the creature comforts like solid doors and wooden chests that minecraft just hands over to you straight away are things you have to put work in to get here. It is extremely satisfying! I haven't enjoyed minecraft the way I enjoy vintage story in years, maybe ever.

Apologies for the wall of backseat gaming lol. I really do hope you continue playing this game! I'll definitely keep watching!

Tips
1. There was a beginner tutorial at the start but you didn't notice it
2. You dont need to hoe the dirt to place tree seeds
3. The items in the handbook change to show what items can be used for each crafting, for example you dont need silver nail and strips for a chest, any nail and strip works
4. When you find surface nuggets you should always mark them on the map, because surface nuggets indicate an ore vein underneath
5. You can place tool on the ground near a wall
6. You can place down items on the ground for storage, and some items can be stacked like fire wood
7. You can make a 1 by 1 cellar by making the surrounding blocks packed dirt because regular dirt doesn't count as "sealed" and you can place storage vessel in it so food can last even longer, remember to cover the cellar so it can be fully sealed for it to work
8. You can see what clothes your wearing by pressing C it also shows you your temperature and what food you've been eating because in this game you need to have a balanced diet to heal fast and have extra health

Fun fact! This game started as a minecraft mod and later was converted into a stand alone game cause creators hated that minecraft moding is not as free as it should be

If you launch the First Steps tutorial at the start it does give you that hand held walkthrough guide of the first steps you were asking for :)

Regarding oceans: oceans are still experimental, and are disabled by default, so your current world will not have any. If you want them, you will need to create a new world with the "landcover" setting changed to be less than 100% (less landcover = bigger oceans). You can also tweak the "landcover scale" setting to adjust the balance between smaller vs larger landforms (islands vs continents, basically).
