Breakfast Tacos on the Griddle (with Green Chiles and Chorizo)

These Breakfast Tacos on the griddle are loaded with chorizo, roasted Hatch green chiles, diced sweet potatoes, and shredded pepper jack cheese. Scramble some eggs on the flat top grill and load up your warm corn tortillas for a delicious breakfast taco recipe for the griddle that packs a punch of flavor! Start by roasting fresh Hatch green chiles on your grill or smoker, or you can also use canned diced green chiles to make these griddle breakfast tacos even easier. While the chiles are roasting, go ahead and cook your diced sweet potatoes on the griddle. Then, add ground chorizo to the flat top grill. You can also substitute your favorite breakfast meat for these easy breakfast tacos. Watch how to prep your roasted chiles for the tacos - you'll need to remove the skins and seeds and dice them up to fit in your tacos. Then, cook your scrambled eggs on the griddle last and warm up your tortillas. We used corn tortillas, but flour would work great also. Finally, just build your breakfast tacos... Pile on some freshly shredded cheese, scrambled eggs, pico de gallo, chorizo or breakfast sausage, the diced roasted green chiles, and your other favorite toppings. Enjoy!
