Furu is one of those things you kinda take for granted, and never have a second thought about, but then you go behind the scenes and it’s all sorts of fascinating. An inspired choice of guest to bring along too. Head of fermentation research at Noma - nice. And I’ve got to praise the phenomenal camerawork and editing. The music is bang on target !

@<a href="https://www.youtube.com/watch?v=B7mF1AkVTUw&t=559">9:19</a> Granny, garden, and a doggo. The perfect image to paint a picture of wholesomeness.

The different types of fermented tofus in the east are like different varieties of cheeses in the west, which are low-cost protein sources in their food cultures.
