Garlic and onions also need a dormancy period in order to grow properly. This method will give you unlimited greens to eat for a while, but they will eventually die off without that winter dormancy.

As someone who grows onions and garlic indoors, you can pop them in the fridge to synthesize a winter condition for proper growth and allowing reproduction.

You can still make use of the green growth in the kitchen. The green part of the garlic is like a mix between garlic and spring onion. So definitely not a waste.

Garlic shoots are great in chinese cooking. So you could just endlessly cut them and eat the shoots
