That black burnt-on crust, layer on layer of grease cooked hard onto the metal, years of it built up until you cannot tell what color the pan was underneath. And turn it back over and there is a brown scorch inside where supper caught one evening, and a strange rainbow sheen across the middle that was not there when the pan was new. You have scrubbed at all of it and gotten nowhere, and somewhere along the way you decided a pan simply gets that way. So it sits in the cupboard with the bad side down and you do not look at it. That pan is not ruined. Not the inside and not the bottom. I am Elias Yoder. I farm in Lancaster County, Pennsylvania. My wife keeps the kitchen and I do not go meddling in it, but the dairy is mine, and that means the milk pails and the cream cans and the big scald kettles are mine to clean. There is no forgiving in that work. A pail that is not truly clean sours the milk, and you find out a day later when it is too late. So I learned scouring the way a man learns anything he cannot afford to get wrong. Here is the thing that makes sense of all the rest. That pan does not have one kind of dirt on it. It has three, and each wants a different remedy, which is exactly why nothing you have tried has fixed the whole pan. Soap for the daily. Heat for the burnt. Acid for the stained. My grandfather caught me leaving the milk pails to sit one evening. He did not scold. He carried one to the window and turned it in the light until I could see the film dried onto the inside of it, and he handed it to me and said that would have wiped out with your thumb an hour ago. Then he stood there while I did it the hard way. Dirt that sits becomes dirt that is cooked on. That is the whole of it. Never mix an acid cleaner with bleach and never use one after the other on the same surface. That goes for the scouring powder and for vinegar. Acid and bleach together make a harmful gas, and people have been badly hurt by it in their own kitchens without knowing they were doing anything dangerous. Use one thing at a time, with plain water. There is no scheme in why nobody tells you this. The money simply runs the other way. There is money in your deciding a good pan is finished and buying another, and money in a shelf of special cleaners, one for the burnt-on and one for the stains and one for the shine. There is none at all in telling you that soap and heat and vinegar and a little powder will bring back almost any pan you own for pennies. Take your worst pan this week, the one with the black bottom you had given up on, and work through it the way I show you. Then come back and tell me in the comments how it came up.
