I freeze grated zuchinni (marrow) in one cup portions to use in baking quick breads and muffins. I also use the grated veg in meatloaf along with grated carrot. Colorful and nutritious.

You can scrub the marrows (we call these zucchini) they can be peeled or not, and sliced into 1/2 inch rounds. Dip them in beaten egg and dredge in flavored bread crumbs. Fry them in your favorite cooking oil, flip and brown on the other side. Lay them on paper towels to sop up the cooking oil. Layer them in a baking pan that has a layer of tomato sauce on the bottom. Cover with tomato sauce, mozzarella, Parmesan cheese and Italian herbs. Bake in a moderate oven until warmed through and the cheese melted. About half an hour. This is Zucchini Parmigiana, it's delicious and can be frozen so you can have a quick meal with little effort.

Inundated with marrows sounds like heaven to me. Delicious things. Managed to buy some from the farm shop this year as nothings grown really apart from some kales and cabbages which are finally starting to grow a bit. Same as last year. I've actually got a couple of random cabbages coming up where seeds dropped last summer. 🤷 But now it's raining there's TONS of what look like brassica seedlings coming up. Who knows what from....<br><br>But apart from that, nowt. <br>Marrow everything for me. I love the things. Great childhood memories there..

Great job preserving your garden produce!<br><br>You can also use your marrow as a mock apple pie filling. Just peel, seed and slice the marrow and use it in place of apples in your favorite apple pie filling recipe.<br><br>You can also make mock pineapple using pineapple juice and the peeled, seeded and shredded of finely diced marrow.

I've never tried marrow and lemon jam but I'll bet it's nice. Soft, neutral flavoured marrow married with tangy lemon, plus zest. I expect it's like marmalade. Not just for spreading on crusty bread and butter....Mmmmm.... be still my beating heart! but also as a sauce for puddings, or even Lincolnshire tart (that's a made-up name), consisting of pastry base and sides, generous marrow and lemon jam on the base and sponge or sponge and spiced crumble over. Fabbo! Just an idea.<br>This jam, due to the large size of marrows, was probably omni-present in the war. But as it's so versatile it probably helped create a culinary triumph every time. Well done Rebecca, it worked out well. 😋
