Top items. Bonebroths, garlic basil tomato sauce, vodka sauce, soups,veggies, chipotle in adobo, and elderberry syrup. Soon to be favorite caramelized onions.

I love canning, and now in my old age (76) I'm finding that the canning needs are changing. I have a few 12 oz jars which are very handy to fill for the two of us with some items. Wish I could find more of those jars. The 8 oz jars are getting lots more use, and I might even try some of the 4 oz ones I have. I have boxes of empty qts right now because that's what we used to use as the main canning jar. Different seasons of life--different sizes of jars! Still, home canned foods are great.

Our top home canned foods are: chicken stock, beef stock, (1/2 pint/snack size) chicken, applesauce, and various beans.

I'm becoming convinced that I should get a pressure canner for next season... Also appreciate how you mention experienced canners knowing the safety principles. That's pretty huge. Not just blindly following the USDA recipes (which isn't a bad thing) but also not throwing caution to the wind. I used to be terrified to use my 'own' salsa recipe, even though I had cross checked it against tested recipes. Now I have confidence that the tomato paste isn't going to kill us all 😆especially with 2 extra tbsp of vinegar for assurance.<br>I might be looking into that canning class 👀 I am still new to the canning world, though it has been 2 years. <br>It's so exciting to find a channel putting out tasty canning recipes, but backed by the science. I don't have to worry about cross checking every recipe against a tested one, to see if it's safe, etc. Just 'that looks good' and go. I suppose it helps that it's being pressure canned, so you don't have to think about specific acidity...<br>We end up with 'woody' chicken around here, not sure why. It would be so good to can it, meaning we can get a good deal on chicken but don't have to worry about chewiness.<br>I think you have sold me! Time to plan which pressure canner to get, and see when I can snag it on sale! (I have to find one with a manual weight, not a dial gauge. because Canada)

One of my favorite things to can is onions in beef broth. I cut onions in half and slice them in 1/4 " pieces. Then I pack my quart jar with the onion. And then add beef broth to 1 inch head space. Debubble them. Then I can them for 40 minutes for quarts. This is so good poured over a beef or pork roast in a slow cooker or roaster.

The potatoes were Herded potatoes and the carrots were honey ginger carrots, both from the Ball canning book.
