    I’m newly retired. Was an RN for 35 years. Full time. 12 hour shifts. Single mom to a very picky eater. Never had much time or motivation to cook. Now, it’s time to really learn how to cook. On a budget. For just myself. I’m vegan. You’re just the teacher I need.

    I can easily imagine someone getting tomato juice and cans of mixed veg from a food pantry, and not realizing that could be a meal. This is a very useful video.

    One thing I would totally add to this is fry onions and tomato paste and garlic in oil as firs step. Adds so much depth in flavour for so little money.

    I volunteer at a community kitchen cafe every Thursday. I work in the kitchen and  I make soups! This is going on nexts weeks lunch menu! ( budget meals are vital in life) So, Absolutely perfect my good man! Best wishes for you and Frankie from Bristol England! 🏴󠁧󠁢󠁥󠁮󠁧󠁿. ❤

    I recognize the underlying charm of this soup is bursting flavor on a budget, yet that noble goal notwithstanding, I could not resist to sauté a diced onion at the outset. Everything, or darn near, starts with an onion. It is perhaps the best bargain in the culinary world. It gives so much and costs so little. When married with some olive oil and a bit of heat it sets the kitchen aglow with olfactory splendor, and for that virtue alone would be worth the few moments’ trouble. And really it is no trouble, but rather a joy, to warm up the knife and the temperament by the simple ritual of dicing an onion. It sets the process in proper motion and is where I, in quiet reverence, nearly always begin. Thanks for another brilliant creation.

    I’m your short-haired doppelgänger. A retired guy who spends a lot of time in a van with a dog who thinks I’m the center of the universe. And we eat the same way you do. I love the way you can wing it without a recipe, use what you have, and make good food. That’s what we need to hear…

    I was trying to say something profound and then figured I would just say thank you. I always look forward to your posts and have learned a ton about cooking, kitchen behavior, and cast iron cookware!  Honestly, my wife has noticed and really appreciates the improvements. I very much appreciate your approach to life.  It has influenced me significantly. Thank you again.

But just wanted to let you know that you’ve inspired me to cook better food. <br><br>I was at the supermarket the other day buying ingredients for the broth you made in an earlier video. An elderly woman behind me at the checkout looked at my shopping and said, “that’s what I like to see, someone cooking real food!”<br><br>She had me look at her shopping and it was full of junk food. She said, despairingly, that she had no time to cook and didn’t know how but would love to if she could. <br><br>I told her all about your channel. You’re one of the best people out there. I hope you keep doing what you’re doing.
