Ahhh geeze. I’m trying to lose weight. My grandpa would make potato pancakes or mashed potato dumplings every Friday. Aside from drooling I was reminiscing. Thank you. BTW. Loved the suggestion on using a food processor. We always used a wire grater. We had grated potatoes and skinned knuckles. I’m putting large baking potatoes on my groc list. Even my Swiss hubs likes them.

That's the way I make them, and I'm happy with them. Sometimes I find they are a little liquidy and I don't always want to add more flour because they get more pasty. I found a recipe on YouTube similar to yours but they drain the liquid from the potatos after processing and just keep the starch portion. I'm going to try that the next time I make them. Have you tried that?

I drain the pancakes using a toast rack over a sheet pan to recover the oil. My Oma would sometimes add a raising agent to the batter, add herbs and or garlic, or fine chopped bacon or smoked sausage.

if you want to have a more rustic Latke, grate 1/3 of the spud on the four sided grater, the same with the onion, then food processer the rest. dab of cayenne. then, once fried, stand 'em on end in a narrow loaf pan, for the excess drip...
