So many of us here are not trying to win competitions or go up against the big names in the BBQ business. We just want to make good stuff for our family and friends. Videos like this make it possible for us backyard warriors to make stuff we can be proud to serve.

As a chef and a caterer, I serve this in carving stations and ALWAYS get extremely good commentary. It’s not the cut…it’s the LOVE that’s adds the soul to the food💯

Maaannnn, my first brisket was a few years ago, from Walmart, $65 (Mind you that’s cheap coming from Northern Cali) and that brisket is still on the top 5. Cooked it on a highland with only 2.5 hour rest. If you know what you’re doing, doesn’t matter what you cook on or what grade meat you buy. Control the fire, control the cook. C’MON STUD!

The biggest cheat I've found is the masterbuilt charcoal gravity feed. Load the thing up with wood chunks in it, set the temperature and go to sleep. Wake up early wrap it and fill the wood again or throw it into the oven after that. So easy to cook brisket then and get that same taste. I've been pulling at 195, it's probe tender but then let it rest in a cooler / warming rack for 5 hours. The rest is what makes brisket.

When I bought my Oklahoma Joe Longhorn smoker, I remembered your video on how to control the fire. Since that day, I've been following your channel. I learned how to use it. I'm from Puerto Rico, and I know how to cook a 90-pound pig over charcoal with an iron rod and an electric motor for rotating it, it’s really good but ever since I tasted smoked food, I wanted to learn how to smoke meat, is different and delicious and I think I've learned a bit because my family thinks I'm a professional. Thank you very much!

I've smoked many of Walmart's cheap briskets in my Pit Barrel smoker, and they always come out tender.

Hi Marcus, it’s me again from Réunion Island 🇷🇪<br><br>I did my first brisket a while ago — European origin, “Select” quality, very little fat cap and a totally different shape compared to what we usually find in the US.<br>I cooked it on a smoker built by my father, made with a thin steel tank, so a lot of heat loss and very little thermal stability.<br><br>That first brisket was good… but the second one was really good.<br>Like you often say, starting BBQ with difficult conditions — lean meat, no professional smoker — actually helps a lot to understand fire management and the cooking process.<br><br>Since then, my father built me a new smoker: bigger, better insulated. Still not a professional pit, but a huge improvement.<br>Now I’m cooking Choice briskets from Creekstone Farms, and honestly… it’s crazy how much difference the meat makes.<br><br>Next step for me: a proper warmer to rest the brisket correctly.<br><br>And just for fun, some context for you guys: here in Réunion Island, I pay around 37.5 €/kg for brisket.<br>The cheapest I can find is around 24 €/kg.<br>So a whole brisket costs me on average about 275 € 😅<br><br>Thanks again for the content and the knowledge you share — it really helps people like us, even on the other side of the world 🤟🏾

You are the one that got me excited again about continuing on with my Brinkman Backyard smoker, rather than investing in a pellet smoker. Thank you for that!
