You can kill a boss with out shooting by EX's ( charms like the divine relic or coffee are perfect for this challenge )

I think no shooting means using Supers or whetstone, as you have the Coffee, the Divine Relic or just the whetstone in all of those? (I know that it still sucks, but yeah it's possible 😂)

There was a Brazilian content creator that finished Cuphead +DLC without shooting, only using wetstone (in the first example, that was the charm)
