  Bananas release a gas called ethylene, which acts as a plant hormone and triggers the entire ripening process. This gas initiates a chain reaction that transforms the fruit inside and out. so if you want to ripen something else, put it near the bananas, and if you want the bananas to last longer, leave them in the open air, not in a sealed bag.
