  Vietnam is progressing very rapidly and more and more foreigners are visiting Vietnam. Tourists like to enjoy your street food. Therefore, Vietnamese should practise food hygiene. Cooked food should not be touched by bare hands. Don't come and argue with me about Japanese sushi chef. They work in a clean restaurant where they wash their hands with running water all the time. What Vietnamese hawkers can do is just wear a disposable glove (and change a new one when it is soiled). Use tongs. Also, DON'T use that same hand with the glove to touch other things. Street hawkers should also clean up their surroundings before that set up stalls. All cooked food should be placed inside a glass case to prevent dust and customers' saliva showering on them. Food handlers should wear masks. I know wearing masks is uncomfortable but just cover your mouth. I've been to Vietnam once and I really like Vietnamese food. I wish Vietnam all the best.

  Cow eyes with socket? OMG. Grease everywhere and cook in open public with no refrigerator , no dishwasher ? Using motor oil to fry foods? where is the health department?

What is it so difficult to wear a disposable glove or use a pair of tongs. Hong Kong roast duck roast meat stalls are also like that and Hong Kong people who are so proud of themselves can tolerate that.
