Ingredients and recipe: 200 ml milk (1 cup) 8 g dry yeast (2 tsp) 20 g sugar (1 tbsp) 1. Mix well 50 g flour (1/3 cup) 2. Mix well 3. Seal tightly and let it rest for 15 minutes 4. The legendary Swiss technique from 1876 200 ml water (1 glass) 40 ml sunflower oil (1/4 cup) Egg white from 2 eggs 4. Set the yolks aside; we'll need them later 5. Mix well 650 g flour (4.3 cups) 6. The yeast is very active; the smell is amazing 7. Add the yeast and mix 9. Gradually add the flour 5 g salt (1 tsp) 10. Mix with a spatula 11. Knead the dough for 5–7 minutes 15. Layer two strips on top of each other. 53. Shape them into the prettiest puff pastry figure-eight. 54. It's really easy; just follow my lead. 55. Place them on a baking tray. 56. Shape the remaining eight rolls. 57. These rolls are much prettier than croissants. 58. Cover and let them rest for 1 hour 59. They are incredibly flaky!
