Working as an apprentice butcher the hours were brutal. We're talking 50+ hours a week, lifting literally tons of meat (of various sorts) solo, doing literally everything required to be able to successfully run a chain. The problem is wear and tear, often you get limited breaks, manager is breathing down your neck 24/7, nothing is ever good enough even though ironically he is the one... teaching... you? Such things pile up over time and the fact that the pay (barely living wage) does not at all reflect the enormous amount of work and hours put in mean, at least up here, that it is very much a dying profession. It's a sad reality since often times we are all that help bring these wonderful goods to the average citizen. Farmers do great work but that, too, is under tremendous strain. Things need to change before we lose the people able to actually grow and process these goods.<br><br>Great video again, much obliged for the travel back in the time.

A true artist and craftsman and first rate Butcher!! I live in Louisville, Kentucky USA - and growing up (I'm 57...) my Father had a 3rd generation family run butcher shop that we bought from exclusively for all our cuts of meat... his motto was "Always have a first rate barber, mechanic, doctor, lawyer, and butcher!" Wonderful video. It took me right back to my being about 7 and 8 .We lived next door to a couple with a butchers shop.They were childless and during the school holidays I spent many hours helping them. I served the brawn and helped in small ways.Feeding their hens and chick's and collecting eggs to sell in the shop. <br>Watching the man cutting the beast up so skilfully was a delight.I could remember the smell of freshly butchered meat. I have made brawn at home it was quite time consuming and I haven't done it for years. I used to cook lambs tongue but can't get them anymore , which is sad.<br>Many thanks.<br>Thank you for a great video. educational

Love your videos Nigel. My ancestors were butchers and livestock dealers back in the 19th century. My father taught me the trade as did yours. Seeing all the cuts from back in the day brought back so many memories. Love the stories. I’ll tell my friends! Best wishes from NZ.
