My dad taught me to wet roast the ribs at a low temperature. However I live in Colombia now at 5,000 feet and cannot get a good roast. I plan to try this cook in a pot approach with green cabbage and xaoxing wine

This is true about slow cooking. Venison has lots of connective tissue and a crock pot will make it so tender you can cut it with a fork 😅

I smoke my ribs. Always juicy and flavorful. Your method is good if you don’t have a smoker. And I don’t sauce ribs. I provide sauce for guests to use.

I've eaten those. I'd rather have properly barbecued ribs smoked low and slow, minimum 6 hours, on indirect heat. No added moisture required, no sauce until you can eat it. it can be done on any grill that has a cover.
