Dumpling purpose is to be soaked with sauces, that's why they are so prevalent in the Czech cuisine where meals often have some sauce. Standard simple dumplings are more spongy to fulfill their destiny.

If you had Pilsner Urquell with that goulash, it would give it that brightness for sure. 😀

Czech cuisine is very underrated but also very time demanding - it takes hours to prepare Svíčková, Guláš and many other dishes so the restaurants pre-cook them in bulk and then keep them warm so it always arrives quickly because they just put the side dish, meat and the sauce on the plate. I noticed many foreigners are surprised or confused by that and don't understand why is it like that. I even read bad reviews from foreigners that they claimed the food arrived suspiciously fast that they think it was not freshly made... and no, no good restaurant would use a microwave that would just ruin it, but do you have time to wait 10-15h for Guláš? Btw many dishes especially made at home are the best served 2nd or 3rd day when the flavors blend so we often cook it a day before in big pot and then store it in a fridge for a few days. It's the opposite of the Italian where you really cannot reheat most of the dishes without ruining them but here if you reheat the pot with Guláš it's actually better than serving it right when you finish cooking it. But not all dishes work that way for example anything fried needs to be prepared just before serving. You can often spot sections in Czech menu - Hotovky (literally ready made meals or pre-cooked meals) which means you will get them instantly but they can run out then Minutky (literary minutes and it says you will need to wait a few minutes before they cook it).
Dumplings are rather tasteless but it's by design - they are there for the sauce and you are supposed to coat them in it completely. It's also not a bread - it's like calling Asian noodles spaghetti just because you don't know how to call them. I supposed that dumpling is not the best word to use for it as a translation and it would be better to leave it as it is and use just Czech word for it not to expect Asian dumplings.
You indeed got the wrong dumplings with the order - they are a bit fancier (more expensive) so they often go just with svíčková which is considered a bit festive meal while bread dumplings that you didn't get are more plain - but they are mostly interchangeable. The waiter also mentioned potato dumplings that don't soak sauce so they are best with meat + cabbage/spinach combo because there is no sauce just juice and fat from the meat and you don't want the first dumpling to get it all and then eat the rest dry. Karlovarské Knedlíky are named just after Karlovy Vary town which is north west of Prague. It's also interesting that you call all liquids, sauces. We call the first and second "omáčka" and it's often thickened broth based sauce with vegetables and herbs. While the last one would be "sos/šťáva" which is mostly juices and fat from the meat that are reduced and slightly thickened and then watered down again. There are many ways to cook and season sauerkraut and everybody likes different things so you can get really great variety of it from very sour to very sweet and from crunchy to very soft. Also Svíčková can differ wildly in flavor and thickness of the sauce as well as many other dishes.
The only crime you did was ordering coke instead of beer to wash down all the heavy meal - that's surely not what we eat every day but Guláš or the Pork really needs one, especially if you are in a place that has beer in tanks. Also those dishes are for rather colder day, I wouldn't get them during 30C summer.
The is also another thing that is called lunch menu - we don't have many cafeterias because pubs and restaurants are efficiently competing with them taking advantage of the pre-cooked meals in bulk that they offer at discounted price during lunch time.

Btw, technicaly czech national dish is "Knedlo, vepřo, zelo" (dumpling, pork and sour kraut) optimaly with beer. The most consumed at time might be the breadcrumb cowered cheese with fries and tartar sauce (mayo based dip).

The best way to use czech dumplings on your plate, is to cut a piece of it, scoop the sauce with the piece (using the fork) and add a bite of meat to it. Svíčková dish is usualy served with a scoop of cranberries and a spoonfull of whipped cream.

The whole purpose of the dumpling is to eat easily much soos! :-)

As for the goulash, this very heavy type with this much ognion is mostly meant to be eaten with a lot of beers.

German here. I live just 3 kilometers from the Czech Republic's border, so I'm often there. Czech Republic is great. I love the nice people, the great architecture ... and I love Czech food. You should visit Karlovy Vary, Marianske Lazne and Frantiskovye Lazne, ( Sorry, I hope I wrote it right, when not, please apologize me). But Prague is "The Cherry of the Cream" ... Absolutely gorgeous. I'm really happy that Czech Republic is our neighbor state, so I can visit it often.❤❤❤
