A quick clarification: this video is not saying airflow has no role in commercial curing rooms or properly engineered systems.<br><br>The point is narrower: in a small home curing chamber, especially a converted fridge, drinks fridge, or dry-aging cabinet, a fan can easily create direct airflow over the meat. Fantastic explanation thank you. lots of prior books/knowledge didnt give the context which you have so thank you. It is clear that my forced air exchange protocol has been running to hard/frequently and this is causing the case harding you have identified. thanks again..

Good explanation. Very useful! You recommend opening the door every day or every other day! Have you ever thought about creating airflow with one low opening and one high opening? I’m thinking more about when you’re away on vacation, for example ? Then come the question of insulation if we cut open air input / output.

Very interesting, thank you so much for posting. I started out curing (biltong) while living in Dubai where it was quite humid, I used a fan in an attempt to reduce mould which was an issue at times. Would a fanless sealed chamber not encourage mould growth (the bad kind)?

What m/s of air movement is too much? I have a chamber with a built in fan, i bought a wind speed meter that gets down to .06 m/s. Unless i put it right on the fan I'll get movement. Otherwise anyplace else i put it i get no movement. A few inches away from the fan ill get .5m/s.
