I am not exaggerating! I think Nicole is the best cook ever! I’ve been trying her cooking hacks and I’ve went from the worlds worst cook ( I’m not exaggerating about that either 🙄), to my family telling me my food is tasting like restaurant food, they love it! I’m actually finding I kind of like cooking which is something I never thought would happen, I’m 63 years old! I can’t thank you enough Nicole! 😃

Three points I’d like to make here: 1, Nicole skews up, 2, Nicole owns it and last but nut least she shows a recovery from the error! She is a cooking gem.

One other little thing that I'm sure every one of us has done before, put a little horseradish in your cream cheese and then spread it on thin ham slices and roll them up or spread it on the salami like the video has. That horseradish addition to the cream cheese is so delectable.

I used to work in a Supermarket Deli and we would make Cheeseballs for customers all the time if they ordered them and would always have a few available for purchase daily. Some easy tips I remember when making them.

We used a regular Kitchenaid Stand Mixer and just put all the ingredients in, starting with Cream Cheese, spices, herbs and mixed a little first. Then added extras like spinach leaves, parsley, diced onion, sliced olives, chopped walnuts or pecans, diced peppers, diced fresh mushrooms, grated carrot, finely chopped broccoli and the list can go on. For meat, we would literally just add slices of deli sandwich meat a single slice at a time and the beaters mixing would break it up into smaller pieces, just turn it on high. Also, using some of those Lipton Powdered Soup Mix or Dip Mix seasoning packets is a real easy way to flavor them if you want. Powdered Soup Stock / Bouillon works really well to season it also.

For coatings, crushed nuts are pretty standard but another thing we did that customers loved was we would roll them in crushed Doritos, Cheetos, Funyon's or Takis, just use whatever flavor you want. I don't recommend crushed potato chips though because it gets kind of soggy or mushy faster than you might eat the entire thing, same with crushed crackers or pretzels. Serve these with any type of savory Crackers, pretzels or Chips that can be spread on. Celery stalks are great too since they can use a butter knife / spreader to fill the middle. Flat slices of veggies like Carrot or Radish work as well.

We also made Sweet Dessert Cheese Balls. Just mix the Cream Cheese with about an equal part of Powdered Sugar and add a teaspoon or two of Vanilla. Then you can mix in stuff like Coconut Flakes, Chocolate Chips, Chopped Nuts, Sprinkles, Cinnamon, Crushed Oreos or any other cookies you want. Finally roll them in stuff like crushed Corn Flakes (any cereal really works), granola, crushed graham crackers, coconut flakes, mini chocolate chips, chopped nuts, crushed cookies. You can also mix stuff up like add some Cinnamon Sugar to crushed Corn Flakes or have a bowl full of Coconut Flakes, Mini Chocolate Chips and Chopped Nuts all mixed to use as the coating. Serve these with Graham Crackers or some flat hard cookies to spread on.

If you put your cream cheese in the freezer for about an hour, you can grate it to add to eggs. It makes a more even taste throughout the eggs.

Does anyone else besides me eat cream cheese by itself? I love Philadelphia brand in the rectangular brick and I will just cut about a half inch section and eat it, alone. Mmm so good 🤍🤍🤍
