Its very interesting way to preserve dairy product across the world. In Asia we have abundant sunlight so we tend to dry our food ingredient and mostly fry to enjoy everything afterward, while in Europe they make wet cheese ferment it in the basement and enjoy them in different way, in Mongolia they also dried the milk curd through the cold and windy climate, and mix it as versatile ingredient in their everyday staple..so amazing to learn food culture..I just love it

This made me think of when Yan from LittleChineseEverywhere toured Yunnan. She tried Rushan cheese and loved it. I kept thinking during her video, "I hope I see Penji's family home in the background 😭😭
