  A higher grade matcha won’t be bitter, but it’s a lot more expensive. I’d say leave the dusting out unless you have really good matcha.

  For the fruit dumpling. It looks like you need something to make it "stick". Maybe a little sugar syrup on top of the fruit to act as glue?
