In the hearts of Chinese people, Sun Wukong is a symbol of freedom, indomitable spirit, and the courage to face difficulties. I hope you can also face your future life positively like this monkey. This is what the second ending wants to tell you.

Erlang Shen is secretly helping Wukong; they are both rebels in nature, so Erlang knows exactly what Wukong is thinking and feeling. Erlang's initial story was he wrecked the Celestial Court to release his mom from their grasp (his mom was Jade Emperor's sister, so Jade Emperor is Erlang's uncle.) Also, Erlang didn't kill Wukong, Wukong yeeted himself and scattered into 6 relics, that's why Erlang said he couldn't kill Wukong even if he wanted to, only he could kill himself. At the end of the chapter 5 animation, Erlang distributed 5 of Wukong's relics to 5 Yaoguai's kings and he took the mind relic, helped to store Wukong's memory for the destined one so he could be in a way reborn into a new body and away from the Restricting band that jailed him in his previous body. That is why after you finish the true ending, the destined one with Wukong's memory refuses to wear the headband, thus breaking the cycle. So our mischievous monkey king finally got what he wanted, to break away from the constraint of the celestial court and that da**ed constricting headband.

For more detailed explanations I stumbled across a video yesterday that explains everything very well:
Channel name: Stories with Cookie
1) Black Myth Wukong complete story & endings explained
2) Why Erlang Shen betrayed the heaven (this one really explains in detail my above comment)

What touched me the most was the animated Easter egg of the wine snatching. In Journey to the West, Sun Wukong is a very willful and naughty monkey, but people don't hate him. On the contrary, this makes him more flesh and blood. Even if he becomes the Fighting Buddha, it can't change his original intention. Even if he becomes a zombie monkey, he is still a naughty zombie monkey. He always finds ways to make people happy. When people are lost, he wants to tell people, "Everything is fine, let's continue the journey."

The ending anime is Wukong's memory in reverse. From the moment he got killed by Erlang back to when he crashed the celestial court. I think what the story is trying to tell us is that in the true ending, The Chosen One got Wukong's memories from Erlang's third eye. Which is a life in which he tried to be a good monkey, follow orders, obtain Buddhahood, for the purpose of making sure his brothers are safe from the celestial court and that he can retire in his mountain once he's done. He found out the hard way that he was never gonna get that, and that the crown was always still on his head. He realizes the only way to get rid of it and live a free life is to die in this life and reincarnate.

The game's 6th relic is the "Mind", and you only get it in NG+ IF you got the true ending after you reject the crown. This means that if you ended up still accepting the crown, you never really understood Wukong's intention hence you wouldn't get his "Mind" relic in the next reincarnation.
