Why Don't We Eat Nilgai Meat?

There's a wild animal roaming free across South Texas right now that outweighs a grown man by five hundred pounds — and almost nobody eats it. In India, it's treated like a sacred cow. In America, it's classified as an invasive pest. And yet, according to Texas A&M's own meat scientists, its meat is leaner than chicken breast, lower in cholesterol than beef, and packed with more protein per calorie than almost anything else on your plate. So why isn't it on a single grocery store shelf in the country? In the next few minutes, I'm going to show you exactly what a nilgai is, why one culture refuses to touch it, why another culture is quietly hunting it by the thousands, and what the actual science says about the meat itself. You'll learn where this animal came from, how it ended up taking over a stretch of the Texas coastline, and why some ranchers say it might be one of the healthiest — and most overlooked — proteins in North America. Stick around, because the answer to "why don't we eat it" is stranger, and more political, than you'd expect.
