  FUN FACT: There is a pretty big population of Korean-Mexicans in the Yucatan peninsula! I have a professor who is researching it and its pretty cool

  Mexican people are wonderful! I stayed with a Mexican family when I did a foreign exchange program in my early years of undergrad. They were the kindest people I’ve met overseas. My host mom still messages me to check on my well being and send me well wishes every holiday 😭❤ when I left she told me to consider her my second mother

  Here&apos;s the salsa recipe Heejae asked:<br><br>Spicy Arriera Salsa<br><br>This spicy Mexican salsa has a smoky, bold flavor and is perfect for tacos, grilled meats, pork rinds, eggs, or quesadillas.<br><br>Ingredients<br>6 dried árbol chilies<br>4 dried morita chilies (or dried chipotle peppers)<br>3 medium tomatoes<br>2 tomatillos<br>3 garlic cloves (unpeeled)<br>¼ white onion<br>1 tablespoon vegetable oil<br>Salt to taste<br>½ teaspoon dried oregano (optional)<br>A splash of water, if needed, to adjust the consistency<br>Instructions<br>Roast the vegetables<br>Roast the tomatoes, tomatillos, garlic, and onion on a hot skillet or griddle until they develop a nice char.<br>Toast the chilies<br>In the same skillet, lightly toast the árbol and morita chilies for about 10–20 seconds per side. Be careful not to burn them, as they will become bitter.<br>Soak the chilies<br>Place the toasted chilies in hot water and let them soak for about 10 minutes until softened.<br>Blend<br>Peel the garlic and add it to a blender along with the roasted tomatoes, tomatillos, onion, softened chilies, salt, and oregano.<br>Blend until smooth. If the salsa is too thick, add a little water.<br>Cook the salsa<br>Heat the oil in a saucepan over medium heat.<br>Carefully pour in the blended salsa and simmer for 8–10 minutes, stirring occasionally.<br>Add a little water if needed to reach your preferred consistency.<br>For Extra Heat 🌶🌶🌶🌶🌶<br>Use 10–12 dried árbol chilies instead of 6.<br>Leave the seeds in the chilies.<br>Add 1 roasted habanero pepper for an even hotter salsa without losing the traditional arriera flavor.
