Hi Mark. The pureed vegetable is called callalloo. It is made from the leaves of the taro plant (also called dasheen bush), okra and Scotch bonnet peppers - all stewed in coconut milk. <br><br>Trinidad and Tobago's population is multi-ethnic, with groups of people who trace their origins to West Africa, India, China, Portugal, Syria, England and elsewhere, as well as the original Amerindian community. Our cuisine is a melting pot of influences from all of these groups. The meal that you had reflects this diversity. The callalloo is West African in origin and the curry comes from India.
