Bread was the daily pay for most farm labourers.
Half of a 2 lb loaf with dripping and a mug of small ale for a day's work.
If you were traveling, it was likely that you would ask for alms at the local monastery, and the monks offered food, after a day of work, then after supper, there would be a bit of floor space to sleep on.

When i was a child my mom used to buy crushed wheat. She'd soak a couple of handfuls overnight and cook it in the morning. If she was still alive she'd be tickled oink to know that she'd been making medieval frumenty all along.

Great vegan ideas. Tomorrow I will make a cabbage tofu onion carrot stir-fry with rice noodles. Today, I am eating vegan gluten-free corn bread, peanut butter with chocolate sauce, basmati rice with yellow split peas and tomato stew with broccoli 🥦.
