I love it
"Giant and terrible monster, a true horror of the world, then Geralt showed up..."

Before watching the video: there is a mistake in your info of this video. You wrote that elves hid behind walls, which is wrong. Elves never built walls surrounding their cities and castles, only humans did much later when they took over the cities. This is explicitly stated in the books, at the start of Lady of the Lake IIRC.

I loved reading that part of the books where Geralt was advising a bunch of fools to stop from trying to save an elven child from an aguara, that its completely suicide.
Turns out they did anyway without him knowing, and THE WRONG ONE
He started shouting at the crew to go into the bank of the river and leave the child there or theyre all gonna die
They didnt listen... they just babbled that hes a witcher and that he can protect them from monsters
He tried, BY MAKING THEM GIVE UP THE CHILD
They ended up killing her by accident
He was so done with their shit and stupidity hes just going ''yeah we're dead, we're fucked, we're so fucked the best outcome we get fucked painlessly'' most of the chapter

I really like the idea of eyeless Hellhounds. They can sniff out their prey/victim, they not need to see them.

You can kill a Penitent in the witcher three, and you get a good bit of info on it in the beastiary.

11:20 I don't think the Aeschna is a rare creature, Geralt seems to think that it thrives since humans polluted the Pontar and there was more than one that attacked his boat.
14:43 No, the Kayran isn't a creation of the Spheres, if you discuss with Sheala, Geralt affirms that the Kayran is a creation of a mage and that it is unsuited to live decently in the river of Flotsam. Cedric also said that the Kayran appeared recently, it's not a hundreds of years old creature. Triss confirmes that it is unstable and detoriating.
16:20 Aguaras kidnaps only elven girls, not humans. They wouldn't be rare otherwise considering humans are one of the most prolifique species.
