I'm Vietnamese and had visited Ninh Binh in 2022, I can vouch that the boat ladies are very good-natured in their gossips. Things like "oh wow a Turkish tourist", "what a cute family", "hope they find the way up that shrine on the cliff". I know since I ride those Trang An routes twice when it's extremely busy, so the ladies got to gossip with each other while paddling. Ninh Binh people are famously kind and innocent. About Tam Coc, it's mostly busy in spring and autumn when the rice paddies are ready to harvest and beautifully yellow. Otherwise Trang An is better year round.

To be honest, it was just a rich flavour. I also had ‘Betamax’ which is BBQ’ed pork blood squares. Also a one and done lol
