Indian home cooking has a lot less of fat and spice. Several dishes with no onions either. It’s light yet flavourful

Its the other way around. 2 parts garlic/ 1 part ginger. Otherwise it will turn bitter!.

Even adding some drops of lemon juice will separate rice and with boiled rice rice will be pure white in colour

Most of Indian home cooks, not only restaurant chefs use the same technique. To avoid the yogurt to curdle add little water to the gravy to lower temperature and then add room temp yogurt
