Patricia McKillip (especially Riddle-Master books), Guy Gavriel Kay (eg Fionavar books), Robin McKinley (especially Beauty; Damar books), Peter S. Beagle (eg Last Unicorn), Megan Whalen Turner (Queen's Thief books), Diana Wynne Jones (Howl's Moving Castle; Chrestomanci books- far too many to mention!); Lois McMaster Bujold in recent series (Penric) - and so many more - have written what are already classics, but aren't necessity widely known.

I’m seeing no reference to Mary Stewart’s retelling of “King Arthur” but from Merlin’s perspective: Crystal Cave. Really well written. I re-read regularly.

Robin Hobb writes wonderfully sprawling fantasy novels set over a huge, interlinked world. Complex characters. An intriguing spin on the standard tropes. Dragons. Liveships. Companion animals.

You're so right that Bujold's Curse of Chalion is unusual for featuring a middle aged, broken man as the hero we follow; but the follow up (Paladin of Souls) is even MORE unusual, in that the main character is a middle aged WOMAN.  So rare to get that perspective in fantasy books.  Loved it!

Another great series are the Temeraire books by Naomi Novik. Seriously, Napoleon and dragons, fantastic!

SO glad to see Curse of Chalion getting some recognition, it's the book that sent me down the Lois McMaster Bujold rabbit hole. Never climbed out, still happy to be there!

At the top of my list would be Lois McMaster Bujold's Sharing Knife story (four books, must be read in order). Low-key -- an unusual love story and a culture clash, but with creepy monsters.

The Green Rider series by Kristen Britain. One of my favorites!
