I like how they have a separate plate for cracking the eggs on, so that they don't get the counter dirty from egg leaking onto the counter by cracking on it. There's also a glass to keep the chopsticks after beating the eggs. Stuff like this is what separates a well-thought out and organized workflow and regular kitchens.

自身は返しが出来ない(フライ返しを使う)最初は卵液多目、滑らしながら焼くの！ほんと神業、真似して頑張ってみます！ありがとうございました😊

I'm not a chef, but I've worked hard on scrambled egg perfection over the years (yes, I know this is an omelet).This takes a CRAZY amount of confidence and much harder than it looks. Just cooking eggs at that high a temperature and multiple layers is something that takes a high degree of skill.
