  French dude here. <br><br>So basically entrecôte is &quot;beef&quot;, but more specifically a rib steak. This is the cut that is most popular in french &quot;bistrots&quot; where you can have the iconic steak frites. As you go down in price, you&apos;ll be served different pieces of beef like onglet, bavette (which is flank I think ?), but the main piece is rib.<br><br>As for sauces well ... let&apos;s just say we have invented a lot of them. The mayonnaise, the moutarde, the bearnaise, the bordelaise, the poivre, the chasseur etc etc etc. Most of french people just use the first two and the rest of them are considered a luxury, or something that is so old and specific to a few parisian restaurants that we don&apos;t have them very often. I mean I&apos;m pretty sure most french people haven&apos;t even heard of entrecôte sauce.<br><br>Excellent content as always Monotonic !
