Perhaps think of it like your main mission is going to walmart for a few items. While there you run into an old friend or family member who's back in town for a limited time that you haven't seen in ages and would deeply love to catch up with. Those side quests are a part of the story and with Witcher 3 a part of what makes the game so rich. Some of them sides even tie into options for later outcomes within the main quest. So maybe don't short change yourself on the experience 😉

My favorite game of all time. After I finished Breath of the Wild on Switch, and Horizon Zero Dawn on PS4, I decided it was my XBox's turn for a workout. I played Witcher 3 based on a co-worker's recommendation. It was a life changer. I've since played it on all the other consoles.

I also felt overwhelmed on my first playthrough. I got through a big chunk of the game spamming the attack buttons before I slowly started incorporating other things, like signs, oils, and potions. I usually play all the side and main quests in the order of recommended level. By the time I get back to the main quest, I tend to be pretty over-leveled. I learned to say "yes" to pretty much any optional quests. Free money and experience points. The early side quests are also designed to teach you various game mechanics.

The game got a HUGE update a few years ago, which included a visual upgrade for current gen systems (ray tracing and such). That's why it looks so great for a game that's a decade old.

I absolutely love the music and the look of White Orchard, it reminds me of being a child in my grandma's village in Poland. Both beautiful, but somehow with a pinch of sadness.
