Honey Brands to Avoid: 3 Label Tricks and 5 Ways to Get Real Honey

If you want honey you can trust, here's the whole answer in one line: buy from a local beekeeper, or buy raw unfiltered honey with a single country of origin printed on the jar. If the jar doesn't say where it came from, put it back. Now the part almost nobody knows. Honey has a fingerprint. Pollen. Every grain is specific to the plants the bees visited, and a lab can read it and tell you where the honey came from. Ultrafiltration strips every grain of pollen out. No pollen, no test, no proof of origin — and that is exactly why the water test and the match test can't detect fake honey. Ultrafiltered honey passes both more reliably than real raw honey. And the question everyone asks — how is this legal? In March 2006, American beekeepers and the American Beekeeping Federation petitioned the FDA to create a legal definition of honey. In 2011, the FDA denied it. The 2014 guidance that followed is non-binding and does not address ultrafiltration at all. The EU and the international Codex standard both define honey as a product that hasn't had its pollen removed. The United States does not.
